How we store our potatoes- they keep best at 36-40 degrees F with high humidity about 90%, temps below 35 degrees the starches convert to sugars but they will revert back it kept at 70 degrees F in 1-2 weeks. Keep in the dark. The pine shavings or sawdust needs to stay moist to keep up the humidity so they don’t shrivel. Don’t let them freeze, then they are completely disgusting.
